Miso and Soy Sauce Factory
Founded in 1931, we manufacture miso and soy sauce in Hitoyoshi City, Kumamoto Prefecture. Our company was affected by the flood on July 4, 2020, with 120 cm of water and most of our products, raw materials, and machinery were washed away, but thanks to the efforts of our employees and many volunteers, we were able to recover quickly. You can now tour the factory. Tour hours are 9:00-16:00, open every day. Our specialty is "Mountain and Sea Foods" Tsukudani, made with our own Umakuchi soy sauce. The ingredients are wood ear mushrooms and wakame seaweed. It has a crunchy texture. You can sample the Tsukudani at the shop. We also serve free tea. All of our products can be purchased at the shop. There is parking space for 10 private cars and 3 large buses. Toilets are also available.

Our factory is narrow and long, in the shape of an eel's bed. Inside, you can observe the production of soy sauce, miso, and tsukudani. The work being done varies depending on the time of day. If you come on a weekday morning, you'll have a good chance of seeing steam coming out of the process. On Sundays, you can visit but we will not be doing any work.
Please make a reservation in advance for groups of more than 10 people.
